Red Wine Soil: Red sandy loams layer with a thickness between 10cm and 60cm, overlying a several deep draining limestone bed. Harvest: Harvest at full maturity, avoiding over ripeness. Vinification: The grapes are destemmed and fermented in cement or stainless steel tanks. The maceration could last 3 to 4 weeks, with a gentle work on the marc, in the matter of extracting soft and elegant tannins. Maturing: 50% of the wine is aged for 10-12 months in French oak barrels. The rest matures in tanks in order to encourage the fruit aromas. Colour: intense red colour. Nose: complex with black fruit aromas (blackcurrant and blueberries) some peppery smoky notes. Palate: very round structure, slightly woody, very soft. Discrete round tannins with fruit aromas showing through. This fruity wine is ready to drink now but should improve after 2-3 years cellaring. Ageing: it is a new style of Syrah in Australia, a wine meant to favour finesse.
