• Langlois-chateau - Saumur Vielles Vignes, Cabernet Franc 2001 75cl Bottle Red Wine Selected old vine parcels and extended maturation including oak-ageing add an extra dimension of richness and velvetty texture to the fresh cassis Cabernet fruit and redcurrant flavours. Perfect with meaty fish such as tuna and swordfish. The fruit for this wine comes from 3 parcels of land (each covering around 1 hectare) located in Coudray-Macouard. The vines are more than 35 years old and yield 45 hl/ha. Harvest is undertaken entirely by hand with the grapes being collected in 25kg baskets and then transferred to the winery where they are entirely destemmed. Maceration took place in 100hl thermo regulated steel tanks over a period of 3 weeks. A combination of pumping-over and fermentation at controlled temperatures (between 25 - 30 degrees) allowed good extraction and the wine was then racked 2-3 times at the end of alcoholic fermentation. Malolactic fermentation followed partly in barrels and partly in tank.
